Easy Spiced Apple Muffin Recipe

Baking muffins just makes me happy. That sounds crazy, I know, but I’m serious. I love baking muffins. The results are easy and quick so it doesn’t take as long as baking a cake. Muffins are also kid-friendly because they come in their own little packages. This easy spiced apple muffin recipe is tasty and perfect for breakfast or a snack. Let the kids take a hand at baking this easy recipe. They can measure the ingredients, mix and fill the muffin cups. It’s a fun activity to do together.

Spiced Apple Muffin Recipe


2 cups all purpose flour
1 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2/3 cup brown sugar
2 eggs (beaten)
2/3 cup milk
1/4 cup butter (melted)
1 cup peeled and grated/shredded apple
1/4 cup chopped walnuts (optional)


In a large bowl sift together the flour, baking powder, salt, cinnamon and nutmeg.  Mix in brown sugar.  In a separate bowl, combine eggs, milk and butter.  Mix well.  Add egg mixture to flour mixture and mix (do not over mix).  Fold in apples and walnuts (if using).  Spoon batter into lightly greased muffin tin.  Bake in preheated oven at 350F for approximately 20 minutes or until golden and baked through.  Let cool in pan for 5 minutes before removing to wire rack to cool completely.
